Final Thoughts
Sushi By Scratch Seattle is not just a restaurant; it's a redefinition of what sushi can be in the U.S. Diners can expect an intimate setting, remarkable culinary skill, and an experience that reflects both tradition and innovation. If you are a sushi enthusiast or simply looking for a memorable culinary adventure, Sushi By Scratch should be on your must-visit list. Be prepared to leave more than satisfied—and perhaps a little hungry, as some diners note the portion sizes can be modest.
Whether it's a special occasion, a family celebration, or just a passion for good food, your journey here promises to be one you won't forget.

I really enjoyed my experience here. I was expecting a full house with just 10 seats per serving, but there were only 7 of us. As a single diner, I knew I would be eating with strangers, but I was a bit disappointed to be crammed between two couples with less elbow room than an airplane middle seat. That's a minor nitpick amongst an otherwise extraordinary experience. The food was amazing. Each handcrafted piece was delicious by itself. The commentary was interesting, but not why I chose to eat here. I tried two new-to-me beers and enjoyed them both. Compared to the price of the rest of the experience, the $12 each price tag felt more reasonable. Other comments about leaving hungry are probably true. I had a large lunch in anticipation of this, and felt satisfied when I left. But had I shown up famished, I would definitely have been searching for post-dinner food, even after ordering the three extra pieces for $14 each. I'm not sure how they could solve this, and I don't need to leave with a feeling like I just gorged on a buffet, but for the $332 final bill for 1, the risk of leaving hungry definitely could sour the experience. Since I only visited this place during a trip to Seattle, it's unlikely I'll find myself here again any time soon, but it is definitely a place I'd return again.

As someone who has spent years chasing transcendent sushi experiences across Tokyo, New York, and beyond, I walked into Sushi by Scratch Seattle with high expectations--and walked out absolutely floored. This isn't just sushi; it's a masterclass in precision, creativity, and respect for tradition, with just enough irreverence to keep things thrilling. First off, the omakase format is intimate and intentionally paced. With only ten seats at the counter, the chefs engage you directly, explaining the thought process behind every piece. It's not just dinner--it's an education, and they pull it off without the pretension you might find at other high-end spots. The nigiri itself is a revelation. Each piece is a carefully constructed bite, balancing pristine fish, perfectly seasoned rice, and house-made accents that elevate rather than overwhelm. The shima aji (striped jack) was buttery and clean, while the smoked albacore brought a subtle depth of flavor you don't often find. But what truly blew me away was their take on uni (sea urchin). Creamy, oceanic, and paired with just the right amount of acidity, it was hands-down the best I've had outside Hokkaido. What sets Sushi by Scratch apart is their willingness to innovate without sacrificing the fundamentals. Their use of unexpected garnishes--like a dab of miso caramel or yuzu kosho--enhances rather than distracts. It's a bold approach that could easily veer into gimmick territory, but they execute it with such restraint and intention that it works. The beverage pairings, especially the sake, are spot-on. They don't just slap on a standard junmai and call it a day; they've curated a lineup that complements the fish and enhances the experience at every turn. If you're a sake nerd like me, you'll appreciate the thoughtfulness here. In short, Sushi by Scratch Seattle isn't just riding the wave of trendy omakase joints--it's redefining what a sushi experience in the U.S. can be. It's bold, technically impeccable, and worth every damn penny. If you know sushi, you'll recognize this for what it is: a rare gem that honors the craft while fearlessly pushing its boundaries.

I have been looking forward to eating at Sushi by Scratch, so we decided to come for my birthday! It was a wonderful experience starting from the very beginning. We came early for the pre-dinner experience, which consisted of a cocktail and a couple bites (oyster and tuna bite). The space is dark but cozy, in downtown but feels so private since the windows are all blacked out. After a little bit, we were moved over to the main dining room where all the magic happens. When we came in, our names were on our assigned seats, which felt so personal. I really loved our chefs (Chef Kevin and Chef Han, I think). They were so open about their experiences, their thoughts on food in Seattle, and the menu! I always love watching food being prepared and this was super exciting because the chefs are so precise with how each bite is prepared. There were 17 bites in all, and we were told to only use our hands. I think my favorites were the Uni hand roll and the Hotate (scallop). It was super cool how they used the Bone Marrow drippings on the Unagi bite too! Overall such a great experience. We were told that they swap out menu items every month or so, so we'll have to come back in half a year :)

I booked this reservation and then our friends gave us mixed reviews but we decided to go anyways. We walked right past the door as it is easily disguised as just a plan door on building on a busy street. The front man will open the door occasionally to check for those arriving which we observed once we were inside. We went early for the complimentary drink which also turned out to include 2 small bites (oysters and sushi) that we were not expecting. Maybe it said it on the description and I missed it? But they were yummy so I was glad we went early. The drink was a mixed drink with Suntori whiskey and ginger; average at best. For the meal, we were each seated at a place setting that already had our name written out. Those who put a reason for celebrating had little "happy anniversary" cards in front of their places as well. A personal touch if you will. Before we ate, we got an introduction and then the bartender took over with options for sake pairings, cocktails, wine, etc. I went with the Bee's Japanese; roku gin, yuzu, honey. The nigiri was delicious. Each bite with its own twist and flavor. The theme (sauce or way the fish was prepared) complimented each fish/protein. There were some that the sauce definitely overpowered any other flavor but I liked it. I think those for who like the more simple, umami, natural flavors or style of omakase may not enjoy this meal. Those who like fusion and sauce and vibrant flavors probably will. In my opinion the price was a little high but it was a fun and different experience to your traditional omakase and I am glad we went. It probably was a one time experience but a good one. To the restaurant - I probably would put a black curtain between the eating area and the bathroom. I didn't find it pleasant eating with a view inside the bathroom for those who didn't close the door after.

What a fun experience! Sushi by Scratch is not your traditional omakase style restaurant. They have more of a speakeasy vibe and modern flavors. The sign is very discreet and you will use a doorbell to be let in. Parking is pretty easy to find on the street, or you can opt to walk to the Amazon garage that has free parking in the evenings. We opted to come 30 min early to experience the welcome beverage and complimentary bites. Everything was already tasting so good. Once we were finished with those, we were led into the dining area where our assigned seats were. All of the staff were wonderful and would check in on us pretty often. Although I enjoyed pretty much each course, the most memorable one was definitely the unagi. This was served after the bone marrow course, so all of the remaining bone marrow juice was torched right onto the unagi. The combined flavors knocked me tf out. At the end, they took a polaroid photo of each party to take home as a souvenir, which was a cute touch.

I went here for my birthday a while ago, and I was really impressed by the quality and attention to detail that they had. This was my first experience in Seattle, and I would say that it actually compares to Asia, Hawaii, and was a top five experience for me! I feel like more than the quality of the fish, which was amazing, I was really impressed by how the chef explained all the seasonings and toppings or where they sourced their fish, this was a great immersive experience overall. They also gave two appetizers when I walked in and a Yuzu alcoholic drink because we came a bit early. My personal favorites were the Otoro and bone marrow! So gooddd

Overall food is good. I am more the traditional omakase style, let the fish speaks for itself.

Hands down the BEST omakase experience I've ever had in Seattle. A must visit for someone who looks for dining experiences with highly personalized service and unique items. It's definitely not the traditional omakase that just has your standard nigiri's, every single piece has a twist to it and we were blown away every single course. The ambiance was intimate and personalized. They wrote down our names on a card and also had a chef/service for every party explaining each dish. We also had free welcome drinks and two apps prior to getting seated, which all tasted amazing as well. 1000% worth the price and would absolutely go again!!
